INGREDIENTS
SERVES 4
3 large tomatoes
1 green or red bell pepper
I onion
1/2 cup flat leaf parsley
Juice of one lemon
1tsp pomegranate molasses
1 tablespoon sweet pepper paste (tomato paste is an acceptable sub)
1 teaspoon of sugar
2 garlic cloves
2 tablespoon olive oil
1/2 teaspoon of dried allepo pepper/rep pepper flakes
1 teaspoon sumac
1 teaspoon of mint
Salt and pepper to taste
METHOD
- Add tomato, bell pepper, onion, garlic, parsley into a food processor and pulse until finely chopped.
- Add lemon juice, molasses, sugar, olive oil, mint, sumac, pepper flakes into the mixture and pulse again.
- Add salt and pepper to tasteRefrigerate for 30 minutes before serving.
