INGREDIENTS

SERVES 4

3 large tomatoes
1 green or red bell pepper
I onion
1/2 cup flat leaf parsley
Juice of one lemon
1tsp pomegranate molasses
1 tablespoon sweet pepper paste (tomato paste is an acceptable sub)
1 teaspoon of sugar
2 garlic cloves
2 tablespoon olive oil
1/2 teaspoon of dried allepo pepper/rep pepper flakes
1 teaspoon sumac
1 teaspoon of mint
Salt and pepper to taste



METHOD

  1. Add tomato, bell pepper, onion, garlic, parsley into a food processor and pulse until finely chopped.
  2. Add lemon juice, molasses, sugar, olive oil, mint, sumac, pepper flakes into the mixture and pulse again.
  3. Add salt and pepper to tasteRefrigerate for 30 minutes before serving.
